Hello people. I'm the lucky/unlucky owner of an Orange Pi Zero 3 and I'm trying to get a definitive answer as to whether the hdmi interface can support more than two (stereo) channels. In the current build, I only have stereo, but I don't know if it's an actual hardware limitation or if it's a driver or dtb limitation.

It's not clear. From what I read it depends on how many tdm slots are on the i2s interface.

It supports 4k displays, so the bandwidth is there. From what I read, on Allwinner, he HDMI audio block typically gets its data from the I²S/TDM audio controller. I don't have any documentation on how the TDM audio controller or how it's connected.

Gemini/google claims: "Channel and Resolution Support: In TDM mode, the chip supports a maximum of 16 channels with up to 32-bit resolution at a 96kHz sample rate." I don't know where it's pulling that from though.
