Your description of the problem was clear, I didn't have any trouble understanding what was happening. I just have no idea what causes it because I've never seen it happen on any of my systems. Have you tried connecting to a different display?

I do not have to select the session each time, it either defaults to plasma wayland for me or remembers my choice

presumably that's a tuigreet function rather than greetd in this case

And tuigreet has some options to remember session selection, you could try those
